The other day I promised the kids pancakes for tea - and as a healthy compromise I made cottage cheese pancakes - a total success!
500 g cottage cheese / keso
4 egg
2 msk psyllium seed husks / fiberhusk
Cinnamon / kanel
Mix it all and let it swell for 10 minutes. Then fry them in some oil. It is a little bit like frying half filled water ballons but it works. I made three at a time in one pan, so you can estimate the size.
Kids loved it, too!
